From the Kitchen | Vee’s Orange Cake

I’m not entirely sure who “Vee” is, I’m assuming a relative of some description whom I never met, but recently I came across her recipe for orange cake. With the abundance of oranges in the backyard at the moment this seemed like a great recipe to try out and it’s so easy.

What you’ll need 

1 cup self raising flour
125g soft margarine
1/2 cup orange juice (approx. 1 orange)
2 tablespoons plain flour
1 cup sugar
2 eggs
grated orange rind

Pre-heat the oven to 190 degrees and grease a loaf tin.

Cream the margarine and sugar together before sifting in the plain and self raising flour. Add in the orange juice, eggs and rind and blend together for 1 minute. Once everything is combined, beat well using an electric mixer for 4 – 5 minutes.

Transfer the mixture into the greased loaf tin and bake for 40 – 60 minutes, depending on your oven.

I made a simple chocolate orange icing and sprinkled orange rind on it, but to be honest, the cake is just as good, if not better plain. Very moist, with the perfect amount of orange flavour – this cake was a huge hit at my work.
