From the kitchen | Apple Cake

My Mother’s old crock pot is a family stable during winter but I had always assumed it was only to be used for savory stews. Imagine my surprise when reading an old crock pot cook book from 1978 to discover they were used for sweet dishes as well. I decided I just had to try it and the Apple Cake recipe sounded easy enough. Obviously not the best recipe if you’re in a hurry – the book does say to cook for 6 to 8 hours!

In the end I only cooked it for 4.5 and too be honest it was over cooked. Next time I try it I will definitely check it after 2. The trickiest part is finding a cake tin that fits inside your crock pot. I ended up using an old pudding tin which was the perfect size. So while the recipe wasn’t a complete success, it still tasted nice and I will definitely try it again.

What you’ll need 

A crock pot / slow cooker
A cake tin
1 cup plain flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1/4 (65g) butter
1 egg, lightly beaten
1/4 cup (65ml) milk
4 cups sliced cooking apples
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoons brown sugar
1/2 cup orange marmalade
2 tablespoons melted butter

Sift together flour, baking powder, salt and sugar into a mixing bowl. Rub in the butter until the mixture resembles bread crumbs. Add the egg and milk and mix until smooth. Pour the mixture into the greased cake tin – I would recommend using baking paper to create handles which you can use to lift the cake out when it’s done – it will be easier than flipping it over to get it out. Don’t be too worried that it doesn’t look like a lot of mixture as it will rise.

Arrange the apple slices on top and press them into the batter. Mix together the cinnamon, nutmeg and brown sugar and sprinkle over the cake. Dot the marmalade and drip the melted butter over the entire cake. Place the tin inside the crock pot and place the lid on loosely so steam can escape. Cook on the high setting for up to 4 hours but check it after 2.
